The present work focuses on the explanation and report of the activities carried out during the curricular internship at VLM Consultores. This internship was completed with a view to finishing the master's degree in Food Biotechnology. Food safety is increasingly an important issue to be addressed by all food industries. With successive changes and updates to national and international legislation, food companies need to remain at the forefront of innovation and guarantee the safety and quality of foodstuffs. The aim of legislation and standards is fundamentally to ensure that only safe and high quality food is sold to the public and that the risk of food borne diseases is low. The food safety unit of VLM Consultores focuses on the provision of food management consulting services. The core activity of this internship was based on a case study of a VLM client company. The aim of this study was to implement the NP EN ISO 22000: 2005 standard in the agri-food bulk terminal - Sograin, belonging to Socarpor Aveiro, SA.
